Let’s Cook Pare
The best recipe for the month of March is now out, PARE! 

Our featured dish for March is a spicy tomato based beef recipe best served fork-tender with a cup or more of rice!😅 

LCP fam, try out this spicy Calderetang Spareribs, from KENNY YU!

CALDERETANG SPARERIBS

Ingredients:
1 and half kilo beef spareribs
Half kilo Camto
2 tbsp canola oil
2 large onions minced
4 garlic cloves minced
1/4 cup patis
5 sili labuyo chopped (or more for desired spiciness)
2 fresh gata 
2 tbsp pickle relish
1 small Reno liver spread
1/4 cup soysauce
2 tablespoon  oystersauce for umami
2 x 240gm cans chopped tomatoes/passata or 12 medium sized tomaties deseeded
40 gms Cheese (preferably quezo de bola or Eden will do) for added flavor and balance the taste
2 green medium bell peppers and 2 red
1 large carrot chopped
2 medium potatoes chopped
Salt and pepper

Procedure:
1. Saute onion till fragrant then add garlic continue sauteing till fragrant
2. Add the meat cook till lightly browned
3. Then add water to submerge the  meat
4. Let boil then add soysauce and oystersauce , pickle relish and chillies
5. Pressure cooked till slightly tender around 30 minutes
6. Add the gata/ half of the bell peppers and liver spread and tomatoes/passata let boil
7. Them pressure cook again for another 10 minutes to fully tenderize meat
8. Add the potatoes ,carrots and the rest of the bell pepppers
9. Let boil till sauce is right consistency and color(add more soysauce for color),meat is fall of the bones and veggies are fork tender.
10. Season with salt pepper taste. Serve with 1 rice cooker of steaming white rice. Enjoy!!!

Congratulations to our JANUARY 2022 Recipe of the Month winner, Ica Asistio! Your determination in getting your preferred version of our popular Pinoy dish, Pork Adobo paid off! Di lang naperfect ang lasa na gusto mo, nagustuhan pa ng ating LCP family! 🧡

💥Pork adobo! Nakuha ko na kung papano, finally!

Update: sa mga nag tatanong po kung pano, eto na po.

Matagal na akong nag luluto pero hindi ko makuha kuha ang tamang timpla ng adobo. After many trial and errors, ganito yung ginawa ko na nakuha ko ang gusto kong lasa:

Gisa ng bawang at sibuyas (marami para mas masarap). Add in the pork/chicken then saute on high heat until mag brown ang meat, mas maganda kung medyo mag rerender ng konting fat then pag nag brown na, add salt and pepper tapos lower the heat and add the vinegar. Wag gagalawin for about 5-8 minutes to let the vinegar cook. Once naluto na ang vinegar, add in soy sauce. Ratio ko is 1 vinegar is to 1.5 soy sauce pero kayo na bahala anong dominant taste ang gusto niyo. Pag kumulo na, add water, enough para mapalambot yung meat. Add laurel leaves, cover and simmer until the meat is tender. Pag malapit na lumambot, high heat ulit para mag reduce yung sauce or kung gusto niyong nagmamantika. 😁
